The Chori-Man, Artisan Chicken and Pork Chorizo "Best Chorizo in Los Angeles"
Humberto Raygoza, The Chori-Man, learned the craft of chorizo-making from his family in Zacatecas, Mexico. This fourth-generation chorizo-maker has made a name for himself by crafting the best artisan chicken and pork chorizo in Los Angeles, and by serving up one of LA's Best Breakfast Burritos out of his walk-up shop in San Pedro, California.
Raygoza began making chorizo in 2013 and selling links of his signature Zacatecano Red Chorizo walking the streets of Los Angeles, selling his wheels of artisan chorizo and creating a loyal customer base from his mobile cooler. He was named the Best Secret Chorizo of Los Angeles later that year by LA Weekly, after Food Writer Farley Elliot discovered Raygoza's chorizo on the corner of Culver and Overland.
The Chori-Man opened his first food stand in 2015 with a simple menu of a chorizo breakfast burrito and chorizo street tacos, and two chorizo styles: Zacatecano Red Chicken Chorizo and Tolucan Green Pork Chorizo. Customers first discovered him at Crafted Market and Brouwerji West in San Pedro, and expanding to Downtown Los Angeles Farmers Markets, and breweries and events across Los Angeles. Raygoza also began selling wholesale chorizo to a number of prominent Los Angeles restaurants and chefs, including Sonoratown in DTLA, The Federal Bar in West Hollywood and Los Angeles, and Salazar in Frogtown.
The Chori-Man shop opened their doors in 2017 in San Pedro, and has been recognized for their chorizo and menu as one of LA's best restaurants. The Chori-Man chorizo breakfast burrito, with two over easy eggs, crispy diced potatoes, and perfectly seasoned chorizo, continues to draw customers from all over Southern Califoria. The original line up of Zacatecano Red and Tolucan Green Chorizo has been expanded to include Argentinian Chorizo and Raygoza's own blend of Maple Habanero Chorizo, a sweet and spicy favorite.
