Our vision at ATINA FOODS is to produce and share holistic food based on traditional knowledge systems using local produce when available. We follow the sacred wisdom of the ancients, that food is medicine and medicine is food. Atina Foods began in 2015 by married team, Carrie Dashow and Suresh Pillai, in Catskill, New York. In a span of five years they have successfully developed and marketed their uniquely delicious products to both food connoisseurs and novices alike. Proudly making simple dishes complex and amazingly delicious with added health to boost, on plates throughout New York and beyond!
Our recipes are evolved from Suresh's traditional upbringing in Kerala, South India, ancestral home of Ayurvedic health practices and a place where one considers food as medicine eating for health is a practiced custom. Each condiment has a carefully considered beneficial combinations and handcrafted to balance 6 basic tastes classified in **Ayurveda as Sweet, Sour, Salty, Bitter, Pungent (hot) and Astringent (earthy / fermented**), to generate a unique complexity of taste that is as delicious as it is beneficial to your health!
Our line of condiments are designed to bring out the best taste in food, helping you to Eat The Food That's Good For You! Using whole spices, whole roots, fruits and herbs (nothing we use is pre processed) our condiments are broken up into two categories (plus a few anomalies) Either preserved in Jaggery Indian Sugar, we call these Herbal Jams, or lacto-fermented with salt (no vinegar, no water) and special spice combinations, filled with probiotics, we call these Pickles or Ferments.
Our products range presently consists of naturally shelf stable jarred foods, supplemented with snacks and other edibles. We host online fermentation workshops and in 2020 opened our HOME STORE located in Catskill, NY open Saturday and Sunday 12-5pm through the fall.
