There are a lot of oven makers around—I mean, you can buy a pizza oven on Amazon. What are the differences between the Neapolitan or Tuscan ovens manufactured by different companies?
You know, dependability. The age of the company. Materials. Whether it was made in China. The companies that I work with have been around forever. We just found a 120-year-old Acunto in the basement at 35 Downing St. at a restaurant called Emily [in NYC]—we retrofitted it with gas two years ago and it's back up and running. Basically, our warranties last longer than a lot of other oven manufacturers have been in business.
