Little Ram Oysters
LOCAL OYSTERS: Female owned and sustainably grown in the North Fork of Long Island.
Little Ram Oyster Company is a female-owned and operated family business established in 2018 by Elizabeth Peeples and Stefanie Bassett. The couple planted a seed in Long Island’s North Fork after 17-year careers in NYC to surround themselves with wineries, local farmers, fresh seafood, pristine beaches and some of the friendliest people around. And they couldn't be happier! When the ladies aren't shucking, shlepping or slurping, they are taking care of their baby boy, Finn.
For Peeples and Bassett, becoming part of the vibrant oyster farming community on Long Island started with discovering Erin Byers Murray’s Shucked, a memoir about breaking into the male-dominated oyster industry. Inspired to do the same Peeples and Bassett tapped into the wisdom and seeds of long time Long Island oyster farmer, Karen Rivara to launch Little Ram Oyster Company. The dynamic duo now offers two types of NYS Grown & Certified oysters: their signature Little Ram Oysters—small to medium in size with a crisp mineral notes and medium salinity—and Cornelius Queen™ Oysters—large in size, well cupped, plump and buttery bodied with medium salinity and crisp cucumber notes. In addition to selling on Hudson River Doorstep Market, Little Ram Oyster Company opened an oyster farm stand in June 2020 where customers can get their local oyster fix on the fly.
"The taste of their oysters is reminiscent of vacation, with a clean, crisp minerality and medium salinity." — Edible East End, "On East End Oyster Farms, Women Are Rising to the Industry’s Forefront"

Frequently Asked Questions
Can you recommend best practices for Oyster Shucking and Serving?
There are many tutorials and online videos on how to shuck an oyster! If you are eating them raw on ice, you need to shuck them. However, if you don’t want to mess with learning how to shuck an oyster, there are many ways to cook oysters (grilling, baking, broiling) in which your oysters will open on their own! Below is a video created by Stef on how we shuck our Little Ram oysters!
