This is a bold and rich red wine vinegar that will become your go-to for vinaigrettes. This is an excellent representation of our Fermented Flavors vinegar style and is also aged in American oak barrels after fermentation.

2 - California Junmai Rice Wine Vinegar Made with junmai-grade sake from California

This rice wine vinegar is elegant and has more weight than commercial vinegars. It is slow fermented in small batches using a unique process from the early 1800s. Aged in 25-gallon American oak barrels this vinegar is an excellent representation of our Barrel Aged vinegar style.

3 - Cranberry Apple Cider Vinegar Made with apple cider from northern Massachusetts and co-fermented with cranberries from bogs near Cape Code

This vinegar is our sweet tribute to the Bay State. We mean that literally. Our Cranberry Apple Cider Vinegar is a sweet and tangy vinegar and a crowd favorite. This is an excellent representation of our Sweet and Tangy vinegar style.

4 - IPA Beer Malt Vinegar Made from a Massachusetts craft IPA beer

This vinegar is malty and tangy leaving you with a slight mouth water finish from the hops. It is slow fermented in small batches using a unique process from the early 1800s. It is aged in 25-gallon American oak barrels after fermentation and is an excellent representation of our Barrel Aged vinegar style.
